A new clay pot needs a little attention before its first cook, and simple care after every use, to perform well for years.
Unlike stainless steel or non-stick cookware, natural clay is more sensitive to sudden temperature change. Adding cold liquid to a hot clay pot, or vice versa, can cause thermal shock, the main cause of cracking in clay cookware. The habit worth building early: let the pot cool before washing, and bring ingredients closer to room temperature before adding them to a hot pot.
A hairline crack or chip means it's time to stop using that pot and avoid further thermal stress on it. With reasonable care, a well-maintained clay pot is built to be a long-term kitchen fixture, not a one-season purchase.
